Withered Sencha (or Ichoucha) is a special Japanese green tea where leaves are allowed to wilt or "wither" slightly after harvesting and before steaming.

This process introduces a subtle enzymatic oxidation that creates unique floral, sweet, and sometimes nutty notes, distinct from standard sencha's fresh, vegetal taste, borrowing techniques from oolong production for a richer, fragrant brew.
